This week has been a cookbook that we must use nearly every week – The Italian Cookery Course by Katie Caldesi. Cafe Caldesi, as we have mentioned before, is one of our favourite restaurants in Marylebone. This book contains our go-to recipes for pizza dough, pizza sauce, and carbonara. As usual, though, when it is a book we use a lot, we try to do recipes we’ve never done before. This week, we started with a fantastic boned and rolled leg of lamb – Rotolo di Agnello Con Pecorino, Menta e Carciofi – Rolled Lamb with Pecorino Mint and Artichoke Stuffing, which we served with new potatoes, peas and spinach. The lamb is butterflied and stuffed with pecorino, mint, artichokes and prosciutto. We accompanied it with the wonderful Peperonata – slow-cooked peppers (Red and Yellow Peppers) – this is a fantastically rich version with red wine – truly delicious. Next up was Trofie con Piselli, Pancetta, Porri e Panna – Bacon Peas and Leek with a Cream Sauce and Trofie. An absolutely brilliant supper dish which we all loved. Last up was Polpettine di carne in sugo di Pomodoro – Meatballs in Tomato Sauce. These were lovely meatballs and the tomato sauce was just wonderful. We will do it again.
