Now we go what could be an incredibly cheffy book – Rogan by Simon Rogan. Simon is one of the UKs most inspiring chefs. We ate at his, now Three michelin star, L’enclume in Cartmel in the Lake District a few years ago. We had a tour of his farm before embarking on the tasting menu for lunch. The food was exceptional and to be able to look at where many of the ingredients had been grown was a very special experieince and the lamb crumpet will forever be talked about in our house as a thing of culinary beauty. For one of my birthday’s a few years ago Mrs B got us a seat the Test Kitchen of Aulis when the restaurant was at Clarridges. The food was unbelievable and the sous chef working that night was the awesome Liv Burt. Anyway to the cook book – it is a beautiful book but is not for your average weeknight supper! We only cooked one recipe this week which was Celeriac and Mustard-Glazed Chicken Wings with Celeriac and Apple Salad. The only tricky thing was that you need to juice a celeriac for this recipe. I think you could probably substitute carrot juice (perhaps) but the recipe produced probably the best chicken wings we’ve ever cooked at home. It had a beautiful emulsion with the wings and a fab salad.
