Larousse Gastronomique by the Larousse Committee. This is the encyclopaedia of food and is a truly amazing reference book. It is a stunning combination of references and recipes. Picking a recipe from this book was pretty tricky – there are so many and they are obviously arranged in alphabetical order. Somehow I landed on Cannelloni a la bechamel. This is a very simple chicken and ham in a bechamel sauce stuffed into cannelloni with more Béchamels over the top with a bubbling cheese top. It was delicious!
