Now sometimes there are books that are on the shelf that were bought because of a trend or were a touch quirky and I have to say Mug Cakes by Mima Sinclair had been in that place in my head and therefore I hadn’t really ever attacked it though I’ve a feeling I bought it for mrs b! The premise is making cakes in a mug and then microwaving them to cook them. I know it sounds terrible but I have seen chefs on the great British menu make sponges in this way. I remember a particularly vibrant green number a few years ago. Anyway this little banana bread was lovely, easy to make and in probably less than about 20 minutes we had a warm really tasty banana bread which was light and fluffy and delicious with a cinnamon cream cheese frosting. A great way for a midweek dessert.
