Marlborough on the Menu by Jan Bilton was a cookbook we picked up whilst on holiday years ago in New Zealand. We toured the north and the south islands for what remains one of my favourite holidays. We went wine tasting across this wonderful land and naturally we toured around Marlborough, famous for its Pinot Noir and Sauvignon Blanc. This week we cooked Maple-glazed Salmon with Summer Salsa which we served with rice. Summer salsa was a combo of avocado, tomatoes, red peppers and a new ingredient, to us, Kicap Manis – kind of a sweet soy sauce. It was a lovely summery dish and was very tasty and made a change from the staple of soy salmon (a variation on a soy chicken recipe by Monica Galetti which we probably cook almost every week.
