The Blumenthal craziness continued this week with Further Adventures in Search of Perfection, the sequel to last week’s book. The recipe attempt this week was Chicken Tikka Masala. This recipe, whilst needing several days to make, is pretty straightforward but is well worth the days of effort. You start by brining chicken thighs, then a five-hour marinade of ginger, garlic and roasted garlic. You then make some garam masala and use that with yoghurt and chilli to marinate the chicken for a second time. We barbecued the chicken and made the sauce with tomatoes, onions, more ginger and garlic, more spices, butter, cream and coconut milk. The sauce is finished with roasted cashew nut butter. This is, without a doubt, the best curry-like dish I have ever made. Will we make it every week? Of course not. Will we make it again? Undoubtedly. As the book says, in search of perfection. In my humble opinion, Heston found it.
