The hard-core cooking continued this week with the formidable Heston Blumenthal. His book In Search of Perfection was produced as part of A bbc Programme of the same name. In the show, Heston searched for the perfect pizza , roast chicken, steak, Black Forest Gateau and a couple of others. Heston would head to places like Peter Luger in NYC for steak or Cafe Konig in baden baden. This week we decided to attempt Roast chicken. Now hestons perfect roast chicken is essentially brined first and then roasted at 60 degrees Celsius. You then brown the chicken in a frying pan so that it doesn’t look really pale. So will we be doing it again? Thr brining makes a massive difference and we’ll continued doing that. The slow cooking. Creates an incredible texture in the breasts which were easily the best I’ve tasted in chicken but the legs were not as good as our standard Thomas Keller inspired Version. All in all an interesting experiment and good learning. Sadly I forgot to photograph so this is a random chicken from the archives!! Next time more Heston with pics :-).
