This week was Leith’s Techniques Bible by Susan Spaull with Lucinda Bruce. This is a fantastic techniques book that we’ve had for years. What it lacks in photographs, it more than makes up for with brilliant diagrams and a scattering of recipes. We had a go at Shepherds Pie with greens – a nice take on a classic – nothing earth-shattering here, but the technique of frying half the mince at a time to help get a nice browning on the meat is something that will work whenever we’re doing a mince recipe. Next up was Lamb Curry and Saffron Rice Pilaf. Many curries that we do are very tomato based, but this was much more of a stock-based curry which was a lovely change. The Pilaf was great as an accompaniment.
