This week we are on with more lunch cookbooks. This week was Love your Lunchbox by James Ramsden.
First up was the rather imaginatively titled Crump Monsieurs – yes think Croque Monsieur but on a crumpet :). Rather than just butter you make a rather delicious mustard butter with a combination of butter and dijon. Spread on a hot crumpet, topped with prosciutto and gruyere was a winner. The butter is so easy to make and works brilliantly on steak or just on its own on toast for breakfast. Later in the week I was cooking for just myself and had the really tasty Coronation Chickpeas. Think Coronation Chicken but with chickpeas. I accompanied this with some wholemeal pittas to make a light and lovely supper – obviously they would work a treat at lunchtime! Next week we’re moving into cocktails for a few weeks – probably a little less food and decidedly more drink!
