This week we’re cooking with Jo Pratt from her great family cookbook – Madhouse Cookbook. We use this book a lot. Her chocolate cake is great, there’s a lovely lamb stew with dumplings which has been cooked so often the page is starting to look like a Jackson Pollack interpretation of the dish. She also has a lovely bouillabaisse which has a sneaky tin of lobster bisque in it ;-). We decided to go with all new recipes though this week starting with Chicken, Cheese and Corn Quesa-d-easies, the gang did these without me and they were a hit, no pics unfortunately. They went a bit freestyle with them combining left over chicken with cheese and corn in tortillas and fried in a pan. I’m told they were great. Next up was a Moroccan Lamb Stew, classic tagine flavours and a hit with everyone. Jo’s one pan Hot Smoked Salmon Biriyani was a winner. We just cooked salmon as we weren’t sure the little ones would like hot smoked salmon but you can imagine just how good the actual recipe would have been as with plain cooked salmon it was fantastic. Last up this week we cooked her South Indian Curry which we had with Green Rice from Thomasina Miers. This was a lovely Friday night curry. Not sure it will eclipse our go to butter chicken recipe from The Cinnamon Club cookbook but was lighter and a really tasty Friday curry. The Madhouse Cookbook is excellent and goes down a treat in our madhouse! Next week starts back to back Michel Roux Jr!
