This week we’ve given Thomasina Miers’ book Mexican Food Made Simple a go. Thomasina won Masterchef and then set up Wahaca so we had high hopes. First up was “Sea Bass” with Tomatoes and Pineapple, yes pineapple. Thomasina says in the description of the recipe that those who don’t like pineapple on pizza (she doesn’t, I don’t’, some of our family do – shocking), should try this recipe. I have to say it was absolutely delicious. The recipe should have been with red snapper but we went for Sea Bass, when combined with some fennel and the tomatoes and pineapple – wowsers. This was a truly great recipe. Later in the week we tried Green Rice (rice cooked with coriander and other green things – spinach or parsley). The kiddiwinks loved the rice and we’ve done it a couple of times since – delicious. The last recipe was Mango and Strawberry Salad. This combines strawberry and mango with lime, tequila and sugar (for the adults). Strawberry and tequila combo was excellent but with mango was a bit of a let down (somewhat unpleasant). We thought that what it needed was really ripe mango which ours weren’t to balance the almost bitter nature of the tequila. All in all Thomasina’s book was pretty good and green rice is something we’ll do regularly.
