We were back with Gordon Ramsay this week, using his book Gordon Ramsay Makes it Easy. This book we’ve had for years, but it’s never been one we’ve used a lot. That said, the recipes we tried this week were brilliant, and some of them, I suspect, will become stalwarts of our kitchen. We’d had a reasonably heavy weekend of food over the Queens platinum Jubilee weekend, so we needed something a little lighter on Sunday evening, it has to be said. Gordon’s Tiger Prawn Salad with Mango and Avocado was perfect. Just a wonderfully simple Sunday evening meal. Next up was the somewhat unusual Salmon Kedgeree, which was a nice change from our usual recipe – a Michel Roux Jnr one. Gordon’s take on Kedgeree was quite gently spiced with Turmeric and Saffron, but the overall effect was delicious. We left the Salmon in big chunks, which worked pretty well. Now to a great little recipe – a kind of “healthy” fish and chips – Roasted Cod and Tomatoes with Oven Chips. The oven chips were a revelation, and I’m pretty sure I won’t be buying oven chips as often – as these were easy to do and tasted way better. This was a lovely way of having fish mid-week. Next, we moved from fish to fowl in the shape of Oven-Roast Duck Breast with Caramelised Swede. Though I overcooked the duck a touch, the swede was fantastic, and something that I think will be a way of doing swede for us regularly. The combination of the swede with ginger and honey was perfect with the duck and made such an inspired combination rather than a more predictable orange or cherry vibe. Finally, we tried Pork Fillet in Prosciutto with Baked Couscous. This was a fantastic recipe. What was most interesting was the combination of Parmesan and Couscous – it was wonderful. All in all Gordon Ramsey Makes it Easy does exactly what it says on the tin!
