This week’s cookbook was In the Mood for Food by Jo Pratt. This is a book we’ve had for years, and we used to use it quite a bit but haven’t opened it for years. The book is organised by mood, which is a little tricky when planning for the week ahead, and you don’t quite know what mood you’ll be in. Once you’re over that point, the recipes are fab. We’ll be back at this book again as there were some belting recipes. From the “feeling healthy” section was the star lunch: Prawn, Almond and Basmati Rice Salad – we’ll be doing this again. Again in that section, Soy-glazed Sea Bass with Tomato and Ginger Relish was also a winner. Also from the healthy camp was the delicious Lamb Steaks with Pea and Chickpea Mash and Mint and Lemon Pesto. Cosying up in the “comfort” section was the fantastic “Oh So Simple” Chicken Leek and Ham Pies. Not only were they simple they were stunning. In the “lazy” section was Pesto Pasta Special – pesto and pasta with olives, red onion and fresh tomatoes. This was a lovely little pasta dish. I think perhaps we’d cook the onions next time as they were a touch fiery. “Lazy” also included Parmesan-crusted Chicken with Avocado Salad which was really tasty though coating the chicken didn’t work as well as one might imagine – perhaps a shallow bowl really does matter! The final section we cooked from was “extravagant”. The stunning Sun-dried Tomato, Parmesan and Olive-crusted Rack of Lamb with a Warm Green Bean and Pine Nut Salad was followed by the excellent Marshmallow Meringues with Mango, Passion Fruit and Raspberries. A great cookbook to rediscover.
