This week was Ken Hom’s Foolproof Chinese Cookery (we did Foolproof Thai a few weeks ago. I guess it is probably just me, but the cooking was far from foolproof. We made Chinese Wanton Soup, Crispy Seaweed, Sweet and Sour Prawns, Lemon Chicken, Egg Fried Rice and Chow Mien with mixed results. The filling for the wantons was excellent, but the availability of suitable wrappers let down the wantons themselves. Crispy Seaweed had all the right flavours, but it was challenging to work out how long to cook it, which resulted in somewhat “blackened” Seaweed. The Sweet and Sour Prawns were OK, as was the Chow Mien. This week, our stars were the beautiful lemon chicken and egg fried rice. Both lived up to the billing of being foolproof and were delicious. Maybe our Oriental cooking chops are not up to it, or we need a more foolproof cookbook. Next week is a mood-related cookbook.
