This week’s cookbook shelf cookbook is Foolproof Thai cookery By Ken Hom. To be clear, the cookbook shelves is absolutely not about perfection; it’s about finding new things, and this week was pretty far from perfection. We attempted Thai-style spring rolls, Spicy papaya salad, and a Mussaman-style beef curry. The spring rolls were a bit of a challenge, it has to be said, so we probably won’t try those again for a while – but the filling was delicious. The papaya salad needed an unripe papaya. The challenge was that we could only find a ripe papaya – first-world problem we know. That said the salad was a combination of excellent flavours. The Mussaman curry was great and something we will try again. Even that went a little sideways as we forgot the fresh coriander and peanuts at the end. Ken Hom’s cookbook has been one of the more challenging we’ve attempted, albeit that it is described as foolproof it was nice to dabble in Thai cuisine for a week. Next week is Japan…
